If possible, I prefer to cook eggplant caviar in a slow cooker. The main advantage is that in the heat you really don't want to stand at the stove turned on, and the slow cooker completely solves the problem. And at the same time, you don't have to worry that something will burn.

Step-by-step cooking recipe

Peel and chop all the vegetables.

Turn on the slow cooker in the "Quenching" mode for 1.5 hours.

Add butter and eggplant.

After 15 minutes, add the onion and carrot.

After 15 minutes, add the tomatoes. After another 15 - pepper.

10 minutes before the end of the program, add salt, spices, crushed garlic and vinegar.

Chop the finished caviar with a blender if desired.

Roll it up in sterilized jars.
