I hasten to share with you an excellent recipe for pickled aspen. We will cook them without sterilization. Mushrooms should be boiled beforehand, otherwise a lot of forest debris will remain in them. Cover whole or slice as you like.
Ingredients
For mushrooms:
- Aspen - 2 kg
- Water - 5 l
For Marinade:
- Black Pepper - 6 peas
- Allspice - 4 peas
- Bay leaf - 2 pieces
- Apple cider vinegar - 80 ml
- Sugar - 3 art.l.
- Salt - 2 art.l.
- Water - 1 l
Step-by-step cooking recipe
Peel the aspen leaves, rinse and place in a saucepan with cold water.
Boil for 30 minutes, flip into a colander and rinse again.
Boil water, add spices, sugar, salt and boiled aspen mushrooms.
Boil for 20 minutes, pour in the vinegar and immediately remove from the heat.
Arrange the mushrooms in jars, roll them up, turn them upside down and leave them in the heat for a day.
