Wonderful Georgian tkemali is obtained from absolutely any varieties of cherry plum. Including the blue one. Today I want to share with you my own family recipe, which has never failed. I advise you to roll the sauce in small portions.
Ingredients
- Cherry Plum (blue) – 1 kg
- Bell pepper - 1 piece
- Garlic - 3 heads
- Chili pepper - 1 piece
- Mint - 3-4 twigs
- Parsley - 3-4 twigs
- Salt - 1 art.l.
- Sugar - 3 art.l.
- Spices and seasonings - 2 tbsp.l.
Step-by-step cooking recipe
Fill the cherry plum with water, boil for 5-7 minutes and put it in a colander.
Rub it through a sieve from the peel and seeds.
Pass both types of pepper, garlic and herbs through a meat grinder.
Mix all the ingredients, boil the tkemali for about 20 minutes and season if desired.
Boil the tkemali to the desired consistency and roll it into sterile jars.
