Let's make amber apricot jam with a rich summer flavor? The delicacy turns out to be thick and fragrant, with whole appetizing slices of fruit. For winter tea parties with the family - what you need. The recipe is simple and will not take much time.

Ingredients

  • Apricots (net weight) – 1 kg
  • Sugar - 1 kg
  • Water - 1,5 L (+200 ml)
  • Lemon juice - 2 tbsp.l .
  • Baking soda - 1 tsp.

Step-by-step cooking recipe

Wash the apricots, divide into halves, remove the seeds.

To keep apricot slices intact during the jam cooking process, place them in a soda solution for a few minutes (at the rate of 1 tsp of soda per 1.5 liters of cold water).

Cook the syrup from 200 ml of water and sugar. Add 2 tablespoons of freshly squeezed lemon juice to the boiling syrup and continue to cook, stirring occasionally, until transparent.

From a bowl with apricots, drain the soda solution and pour boiling syrup over the fruits. Cover the bowl with a lid and leave for a few hours, preferably overnight.

Put the bowl with the workpiece on the fire, bring to a boil and boil over low heat for 5 minutes, removing the foam. Then cover with a lid and leave to cool. Do not stir the jam with a spoon so that the apricot slices remain intact! It is enough to periodically gently shake the bowl with the workpiece.

Boil the cooled jam again for 5 minutes and cool completely.

Pour the syrup from the cooled jam into a separate bowl and boil over medium heat for 40 minutes.

Pour boiling syrup over the apricot slices, bring to a boil again and boil for 5 minutes.

Pour hot apricot jam into pre-sterilized jars, seal tightly, turn upside down and cool. Store the workpiece in a cool, dark place.
