If a good harvest of zucchini is planned, there should be zucchini caviar! As you know, you can cook it in various ways. Today I want to share the simplest recipe for squash caviar without frying vegetables. The billet turns out to be tender, tasty and fragrant.
Ingredients
- Zucchini - 1,5 kg
- Tomatoes - 300 g
- Bell pepper - 1 pcs.
- Onion - 300 g
- Garlic - 2 clove
- Vegetable oil - 1/4 glasses
- Vinegar (9%) – 2 art.l.
- Ground black pepper - to taste
- Sugar - 1/4 glasses
- Salt - 1 tbsp.l.
Step-by-step cooking recipe
Wash the zucchini, cut it arbitrarily. Cut the tomatoes into 4 pieces, cut the onion into slices. Peel the Bulgarian pepper from the seeds and stalks, cut into large slices. Peel the garlic.
Pass the prepared vegetables through a meat grinder.
Bring the vegetable mass to a boil and cook over low heat, stirring occasionally, for about 1 hour.
Add salt, sugar, ground pepper, vegetable oil and vinegar. Mix well and boil everything together for another 15 minutes.
Pour boiling caviar from zucchini into pre-sterilized jars, seal tightly, turn upside down and cool. Store the cooled workpiece in a cool, dark place.
