I bring to your attention an excellent recipe for thick jelly from red currant. According to this recipe, it is prepared without gelatin and sterilization. As the mass cools, it thickens. This is facilitated by the high content of natural pectin in berries.
Ingredients
- Red Currant - 2 kg
- Sugar - 2 kg
Step-by-step cooking recipe
Put the currants in a saucepan, cover with sugar and put aside for 2 hours.
Put on a slow fire and boil for 7-10 minutes.
Cool the resulting mass slightly and rub through a sieve.
Pour the jelly into sterilized jars and roll it up.
