Homemade cakes are often prepared with the addition of cherry jam. It is quite thick, moderately sweet and goes well with most types of dough. A more homogeneous mass can be obtained by interrupting the confiture with an immersion blender.

Wash the cherries under running water and remove the seeds.

Mix sugar, corn starch and citric acid.

Pour the cherries into a deep saucepan, add the dry billet and mix.

Bring the mass to a boil over low heat and cook until it thickens. On average, it takes 10-15 minutes.

Put the hot confiture into jars and close the lids.
