Delicious homemade adjika can be made from a wide variety of vegetables. For example, from zucchini. A great solution at the height of the season, when there is simply nowhere to put them. So if you've ever wondered what else to do with zucchini – this option is for you!
Ingredients
- Zucchini - 2 kg
- Bell pepper - 500 g
- Tomatoes - 1 kg
- Garlic - 1 head
- Chili pepper - 1 piece
- Salt - 1.5 tbsp.l.
- Vegetable oil - 100 ml
- Vinegar - 2 art.l.
- Sugar - 1 tbsp.l.
Step-by-step cooking recipe
Pass the peeled tomatoes through a meat grinder, mix with half the oil and simmer for 20 minutes.
Mince all the remaining vegetables with garlic and chili, add the remaining oil and bring to a boil.
Pour in the tomatoes, add salt and sugar, and boil the adjika for 40-50 minutes so that it boils.
5 minutes before the end, add vinegar and spices as desired.
Roll up the adjika in sterile jars.
