Zucchini adjika with tomato paste and hot pepper

I often cook sauces, experimenting with flavors and new ingredients. So once there was a recipe for adjika from zucchini with tomato paste and hot pepper. The taste and aroma are amazing! I advise you to try this wonderful recipe by all means!
Ingredients
- Zucchini - 3 kg
- Hot red pepper - 1 pod
- Onion - 500 g
- Garlic - 100 g
- Tomato paste - 250 g
- Vinegar - 120 ml
- Vegetable oil (odorless) – 100 ml
- Ground black pepper - 1 tsp.
- Sugar - 140 g
- Salt - 90 g
Step-by-step cooking recipe
Mince zucchini, hot pepper and peeled onion.
Mix everything in a deep saucepan, add tomato paste, sugar, salt and oil. Cover with a lid and leave for 30-40 minutes.
Boil the adjika over low heat for 1 hour.
Add vinegar, ground black pepper and garlic passed through the press.
Boil for another 3 minutes and close in prepared jars.
