Beetroot caviar with tomato paste for winter

Delicious vegetable caviar can be prepared not only from eggplants, zucchini or pepper. And also from beetroot, especially in the season when it is still young and very sweet. I share my favorite recipe for such a preparation with tomato paste.
Ingredients
- Beetroot - 500 g
- Carrots - 200 g
- Onion - 150 g
- Tomato paste - 50 g
- Sugar - 0.5 tbsp.l.
- Spices and seasonings - 1 tsp.
- Vinegar - 2 art.l.
Step-by-step cooking recipe
Peel all the vegetables and grate them on a fine grater.
Fry onions and carrots separately, and beetroot separately with a little water.
Mix everything together, add tomato, sugar and spices.
Simmer the caviar for about 15-20 minutes.
Pour in the vinegar, simmer for another 5-7 minutes and roll the caviar into sterile jars.
