I present to your attention a vegetable version of the once popular canned food "Tourist's Breakfast". Pepper with rice is prepared according to the same principle, only faster. Instead of tomatoes, you can use ketchup, tomato paste, sauce or juice.
Ingredients
- Bell pepper - 1 kg
- Carrots - 300 g
- Onion - 300 g
- Garlic - 50 g
- Fig - 400 g
- Vegetable oil - 60 ml
- Vinegar - 60 ml
- Salt - 50 g
- Water - 800 ml
Step-by-step cooking recipe
Finely chop tomatoes, peeled bell peppers and onions.
Grate the carrots on a coarse grater.
Pour rice into boiling water, boil for 10 minutes and discard in a colander.
Fry the onion and carrot in oil for 5 minutes.
Add the bell pepper, rice and tomatoes. Cover with a lid and simmer for 15 minutes on low heat.
Add salt, garlic passed through the press, vinegar and simmer for 2 minutes.
Put them in clean, dry jars, roll them up, turn them upside down and wrap them up well.
