Soak the beans for 10-12 hours, then place in a saucepan with fresh water and boil until half cooked.

Cut the eggplants and soak them in salted water for 15 minutes.

Grate the carrots. Chop tomatoes, peeled bell peppers and onions.

Put the tomatoes in a saucepan, add sugar, butter and simmer for 10 minutes over low heat.

Add carrots, bell peppers, onions and simmer for 15 minutes.

Add the beans, eggplant, spices, salt and cook for another 15 minutes.

Pour in the vinegar and turn off the heat after 1 minute.

Spread out in sterilized jars, roll up and turn upside down.
