I really love cream soups, but it didn't even occur to me that it could be made from asparagus. Until one day this French recipe caught my eye! Today I want to share it with you – this taste is completely new and unlike anything else.
Ingredients
- Asparagus - 500 g
- Onion - 80 g
- Butter - 6 tbsp.l .
- Flour - 2 tbsp.l .
- Chicken broth - 2 glasses
- Cream - 1-2 glasses
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Peel the asparagus and chop it finely. Chop the onion in the same way.
Fry the onion for about 5 minutes in 3 tablespoons of butter.
Lightly fry the flour in the remaining oil, pour in the broth and mix thoroughly.
Bring the broth to a boil, add the asparagus and cook for 20 minutes under a lid on low heat. 5 minutes before the end, add the onion.
Chop the soup with a blender, season to taste and bring the cream to the desired consistency.
