I really love this simple and delicious vegetable salad in winter. When the usual preparations are no longer pleasing, take out this delicious salad from the pantry and diversify your table! To meat, potatoes, to any side dish… It seems to me that both adults and children love it!
Ingredients
- Tomatoes - 250 g
- Cucumbers - 600 g
- Bell pepper - 100 g
- Onion - 200 g
- Garlic - 3 clove
- Vegetable oil (refined) – 3 tsp.
- Vinegar (9%) – 3 tsp.
- Salt - 1 tsp.
Step-by-step cooking recipe
Wash the vegetables, cut the onion into half rings, tomatoes into slices, cucumbers into circles, chop the garlic.
Peel the bell pepper from the seeds and cut into long strips.
Combine the prepared vegetables in a bowl, add salt, mix and leave for 1 hour.
Fill pre-sterilized jars with salad along with the resulting liquid. The liquid should reach at least half of the jar. If it is not enough, add a little boiling water.
Pour 1 tsp vinegar and vegetable oil into each jar.
Cover the jars with the blank with sterile lids, put in a large saucepan with cold water (the water should be “on the shoulders” of the jars) and sterilize over medium heat for 25-30 minutes after boiling.
During the sterilization process, the salad can significantly decrease in volume. In this case, spread the vegetables from one jar with a sterile spoon into other jars, filling them completely, and sterilize the workpiece for another 10 minutes.
Roll up the finished salad, turn it upside down, wrap it up and leave to cool. For long-term storage, move the jars with the workpiece to a cool, dark place.
