Cucumber caviar with tomato paste for winter

Most often vegetable caviar is prepared from eggplant or zucchini. But these are far from the only options available. For example, a very interesting and delicious caviar is obtained from cucumbers. And for color and more variety, we'll add a little tomato paste to it.
Ingredients
- Cucumbers - 600 g
- Tomato paste - 2 art.l.
- Bell pepper - 2 pieces
- Onion - 1 piece
- Carrots - 1-2 pieces
- Salt - 0.5 tbsp.l.
- Vinegar - 30 ml
- Sugar - 1 art.l.
- Spices and seasonings - 1 tbsp.l.
- Vegetable oil - 50 ml
- Garlic - 3 cloves
Step-by-step cooking recipe
Grate the carrots, chop the garlic and chop all the other vegetables very finely.
Fry the onion and garlic in oil until browned. Add the carrots and pepper, and fry for another 3 minutes.
Add cucumbers, tomato, sugar, salt and spices.
Simmer the caviar under the lid for half an hour on low heat.
Pour in the vinegar, simmer the caviar for another 5 minutes and put it in sterilized jars.
