Sweet and sour cucumber and bell pepper salad is very useful in winter. You can serve it to the festive table, and for a simple family dinner, the salad will go “with a bang”. For mashed potatoes, porridges, spaghetti and pasta… I advise you to stock up on a couple of jars.
Ingredients
- Cucumbers - 4 kg
- Onion - 1 kg
- Bell pepper - 600 g
- Garlic - 5 cloves
- Bay leaf - 5 pcs.
- Ground black pepper - 1 tsp.
- Vegetable oil - 1/2 glasses
- Vinegar (9%) – 1/2 glasses
- Sugar - 1 glass
- Salt - 4 art.l.
Step-by-step cooking recipe
Wash cucumbers and cut into circles no more than 5-7 mm thick.
Peel the bell pepper from the seeds and stalks, cut into thin strips.
Cut the onion into half rings.
Combine the salad in a large bowl, add salt, sugar, crushed garlic, vinegar and vegetable oil. Mix well and leave to form juice for 1 hour.
Pack the salad in pre-sterilized jars, add 1 bay leaf each.
Cover the jars with clean lids and send them to be sterilized in a pot of water (the sterilization time for 0.5 l cans is 15 minutes, 1 l is 25 minutes).
After sterilizing the salad jars, roll them up, turn them upside down, wrap them up and leave them to cool completely. Store the cooled workpiece in a cool, dark place.
