Beetroot caviar for winter through a meat grinder
Once I had a chance to try beetroot caviar on a visit. This good old dish brought back memories of childhood: my mother used to cook this often. I decided to prepare this inexpensive and very tasty snack for the winter. I hasten to share a simple recipe with you.

Wash the beets and carrots, peel, cut arbitrarily, then separately pass through a meat grinder. Cut the tomatoes into slices.
Fry finely chopped onion in vegetable oil until golden brown, add carrots and tomato slices, fry together for 5-10 minutes.
Add beetroot, salt, sugar, spices to taste and vinegar. Simmer under the lid until the beets are ready (30-40 minutes), stirring occasionally. A few minutes before cooking, add the chopped garlic and simmer for another 2-3 minutes.
Put the hot beetroot caviar in sterile dry jars, roll it up, turn it upside down, wrap it up and leave it to cool completely. Transfer the cooled caviar to a cool place for storage.
