Tomatoes in their own juice are quite a successful preparation on the principle of “two in one". Serve whole tomatoes to the table as a snack, and use tomato juice to prepare sauces, gravies or dressings in other dishes. I share a simple recipe.

Ingredients

  • Tomatoes - 2,4 kg
  • Garlic - 2 clove
  • Vegetable oil - 2 tbsp.l .
  • Vinegar (9%) – 2 tbsp.l .
  • Black pepper (polka dots) – 12 pcs.
  • Sugar - 2 tsp.
  • Salt - 1 tsp.

Step-by-step cooking recipe

Wash the tomatoes and fill them tightly with pre-sterilized jars.

Boil water and pour boiling water over tomatoes in jars to the top. Cover the jars with sterile lids and leave for 10-15 minutes to warm up. Then drain the water.

Cut the remaining tomatoes arbitrarily, then grate or pass through a meat grinder. The resulting tomato mass can be additionally wiped through a sieve.

Place the tomato mass on the fire, bring to a boil and boil over medium heat for 3-5 minutes.

Add salt, sugar, peppercorns, crushed garlic, vegetable oil and vinegar. Mix everything well and remove the juice from the heat.

Pour boiling tomato juice over tomatoes in jars to the top. Roll up the jars immediately, turn upside down and cool at room temperature. Store the cooled workpiece in a cool, dark place.
