In the Middle Ages, shepherds invented adjika. Spicy seasoning has gained worldwide popularity and it began to be prepared from a variety of ingredients. I offer a recipe for tomato adjika with garlic, pepper and carrots. Serve it immediately or close it in jars for the winter.
Ingredients
- Tomatoes - 2 kg
- Bell pepper - 500 g
- Hot red pepper - 500 g
- Carrots - 500 g
- Garlic - 200 g
- Apple cider vinegar - 80 ml
- Zira - 0,5 tsp.
- Hop-suneli - 0,5 tsp.
- Ground coriander - 0,5 tsp.
- Sugar - 1 art.l.
- Salt - 1 art.l.
Step-by-step cooking recipe
Cut the hot and Bulgarian pepper in half, peel off the seeds.
Mince tomatoes, hot and bell peppers, garlic, carrots.
Boil the resulting mass for 10 minutes from the moment of boiling.
Rub spices, sugar and salt in a mortar.
Pour the resulting mixture into a saucepan with vegetable mass and cook for another 10-15 minutes.
Pour in the vinegar, stir and immediately remove from the heat.
Put the adjika in clean, dry jars and roll it up.
