Ketchup is usually made from ripe tomatoes. I suggest you move away from the traditional recipe and prepare a spicy ketchup from blue plums. The universal sauce will complement meat dishes and poultry dishes, barbecue and vegetables cooked on the grill equally well.
Ingredients
- Plums - 2 kg
- Bell pepper - 1 kg
- Chili pepper - to taste
- Garlic - 200 g
- Cilantro - to taste
- Tomato paste - 3 art.l.
- Ground black pepper - 1 tsp.
- Sugar - 100 g
- Salt - 3 art.l.
Step-by-step cooking recipe
Wash the plums, divide into halves and remove the bones.
Peel Bulgarian pepper and chili pepper from seeds and stalks, cut arbitrarily. Peel the garlic. Rinse and dry the cilantro.
Using a food processor, chop the plums and prepared vegetables.
Put the plum-vegetable mixture in a cooking pot, add salt, add sugar, ground black pepper and tomato paste. Mix and grind with a blender to a homogeneous puree.
Put the saucepan with the sauce on the fire, bring to a boil over medium heat, then turn down the heat and boil the ketchup, stirring occasionally, for half an hour.
Pour boiling plum ketchup into pre-sterilized jars, seal tightly, turn upside down, wrap and leave to cool completely. Store the cooled ketchup in a cool, dark place.
