Daikon is a popular Asian vegetable. It is similar to black radish, but the taste is milder and completely devoid of bitterness. In this salad, daikon perfectly complements Korean carrots. I like to add ground ginger, but it can be replaced with red pepper.
Ingredients
- Carrots - 300 g
- Daikon - 300 g
- Garlic - 4 cloves
- Vegetable oil - 50 ml
- Rice vinegar - 2 art.l.
- Lemon juice - 1 tbsp.l.
- Ground ginger - 0,5 tsp.
- Sugar - 0,5 tsp.
- Salt - to taste
Step-by-step cooking recipe
Grate carrots and daikon on a special grater.
Mix carrots with salt, sugar and lemon juice.
Daikon in a separate bowl, sprinkle with ground ginger and sprinkle with rice vinegar.
Mix both blanks, add hot oil and garlic passed through the press. Stir, cover and refrigerate for 2 hours.
