Another jar of spicy snacks in the pantry definitely won't hurt. Especially when it's a delicious cucumber salad in Korean. The recipe uses a lot of ginger, garlic and red pepper. If you do not like too hot dishes, the amount of these additives should be reduced.
Ingredients
- Cucumbers - 2 kg
- Peking cabbage - 1 kg
- Carrots - 400 g
- Garlic - 30 g
- Lime - 2 pieces
- Ginger - 50 g
- Vegetable oil (odorless) – 150 ml
- Vinegar - 150 ml
- Tomato paste - 3 tbsp.l.
- Ground red pepper (flakes) – 1 tsp.
- Paprika - 2 tsp.
- Sugar - 150 g
- Salt - 80 g
Step-by-step cooking recipe
Slice cucumbers and Peking cabbage.
Grate carrots and peeled ginger root.
Mix everything in a large saucepan, add garlic, oil, lime juice, tomato paste, spices, sugar and salt passed through the press. Stir, cover and leave for 1 hour.
Boil for 10 minutes from the moment of boiling, pour in the vinegar and immediately turn off the heat.
Arrange the salad in prepared jars, roll it up and leave it warm for a day.
