In autumn, when all the counters are littered with Bulgarian pepper, it's time to cook an appetizing aivar. The recipe for this sauce in Serbian provides for pre-frying or baking vegetables. I like the second option better.
Ingredients
- Bell pepper - 2 kg
- Garlic - 100 g
- Olive oil - 100 ml
- Vinegar (9 %) – 100 ml
- Sugar - 50 g
- Paprika - 0,5 tsp.
- Ground black pepper - 0,5 tsp.
- Salt - 1 art.l.
Step-by-step cooking recipe
Rinse the bell pepper and dry it with a paper towel.
Place on a greased baking sheet and bake for 30 minutes in the oven.
Put the baked vegetables in a bowl and cover with cling film for 20 minutes.
Carefully peel, remove the seeds. Transfer the pulp to the bowl of a blender.
Add salt, sugar, spices, garlic passed through the press, oil and beat until smooth.
Put the resulting mass into a saucepan and evaporate for 7-10 minutes, stirring frequently.
Pour in the vinegar, stir and remove from the heat after 2 minutes.
Spread the ivar in sterilized jars, close the lids and wrap it with a warm towel for a day.
