In Georgia, sauces are often made from plums. They perfectly complement kebabs, kebabs and other meat dishes. I propose to continue thinking on this topic and prepare a sauce of tomatoes and plums. It can be served immediately or closed in jars for the winter.
Ingredients
- Tomatoes - 1 kg
- Plums - 1 kg
- Garlic - 50 g
- Apple cider vinegar - 80 ml
- Ground black pepper - 0,5 tsp.
- Fenugreek (ground) – 0,5 tsp.
- Sugar - 160 g
- Salt - 15 g
- Water - 150 ml
Step-by-step cooking recipe
Cut the plums in half and peel the seeds.
Cut tomatoes into large pieces.
Put the plums and tomatoes in a saucepan.
Add water and cook for 20 minutes.
Rub the resulting mass through a sieve to remove the seeds and peel.
Mix the fragrant puree with sugar, salt, spices and crushed garlic.
Simmer for 30 minutes.
Add vinegar, mix and immediately arrange in jars. Roll it up, turn it upside down and wrap it up with a blanket.
