There are different ways to pickle or pickle honey mushrooms for the winter. But today I propose to go further and cook an unusual mushroom caviar from them. This is a full-fledged independent snack, which then will only have to be opened and served to the table.

Boil the honeydew for 30-40 minutes in salted water, and then pass it through a meat grinder or grind it in a blender.

Finely chop the onion, grate the carrots and fry until soft.

Add honeydew, salt and spices, and simmer all together for half an hour, stirring.

Pour in the vinegar, simmer for another 5 minutes and roll the caviar into sterile jars.
