There are dozens or even hundreds of eggplant caviar recipes. For all its simplicity, each hostess has her own subtleties and secrets. This time I will share with you my favorite recipe in Odessa. Such caviar was cooked for the winter by my grandmother – and so far I have not tasted tastier.
Ingredients
- Eggplant - 4 pieces
- Bell pepper - 4 pieces
- Onion - 200 g
- Vegetable oil - 2 tbsp.l.
- Tomatoes - 8 pieces
- Apple cider vinegar - 2 tbsp.l.
- Spices and seasonings - 1 tsp.
- Greenery - 30 g
Step-by-step cooking recipe
Prick the eggplants with a fork and bake them with pepper in the oven at 250 degrees for about 30-40 minutes until scorched.
Peel the vegetables and chop them.
Peel the garlic and chop it too.
Chop the garlic, onion and herbs.
Mix all the ingredients together, bring the caviar to a boil and roll it into sterile jars.
