Zucchini like mushrooms for the winter without sterilization

If you cook zucchini according to this recipe, they will turn out like mushrooms. A short cooking in sour marinade makes the vegetables crispy and very tasty. In addition to garlic, you can add a little hot pepper, ginger root or horseradish.
Ingredients
- Zucchini - 1 kg
- Carrots - 200 g
- Onion - 200 g
- Garlic - half a head
- Apple cider vinegar - 3 art.l.
- Vegetable oil - 3 tbsp.l.
- Mustard Seeds - 0,5 tsp.
- Black Pepper - 5 peas
- Allspice - 2 peas
- Coriander (in grains) – 0.5 tsp.
- Sugar - 40 g
- Salt - 25 g
- Water - 500 ml
Step-by-step cooking recipe
Chop the zucchini, carrots, peeled onion and garlic.
Boil water, add spices, oil, salt and sugar.
Boil for 2 minutes, add the vegetables and boil for 5 minutes.
Fish out the vegetables with a slotted spoon and arrange them in sterilized jars.
Add vinegar to the remaining marinade, boil for 1 minute.
Pour into jars, roll up and leave for a day in the heat.
