Ingredients
- Zucchini - 1 kg
- Beans - 350 g
- Carrots - 300 g
- Onion - 300 g
- Tomato paste - 50 g
- Vegetable oil - 50 ml
- Vinegar - 50 ml
- Bay leaf - 3 pieces
- Black Pepper - 5 peas
- Salt - 40 g
- Water - 2 l
Step-by-step cooking recipe
Pre-soak the beans for 4-6 hours.
Flip into a colander, rinse, place in a saucepan with clean water and boil for 40 minutes.
Chop the zucchini, carrots and peeled onions.
Fry the onion in oil until transparent.
Add the carrots and continue cooking for 5-7 minutes.
Add zucchini, beans, salt and spices.
Mix the tomato paste with a small amount of broth that was left after the beans.
Pour into a saucepan with vegetables and cook for 15 minutes on low heat.
Add vinegar, mix gently and close in prepared jars.
