This vegetable is often overlooked, nevertheless, you can cook a lot of delicious dishes from it. I recommend starting with this simple recipe. Crispy kohlrabi cabbage is a great alternative to pickles and zucchini.
Ingredients
For cabbage:
- Kohlrabi - 2 kg
- Salt - 1 tbsp.l.
- Water - 3 l
For Marinade:
- Black Pepper - 4 peas
- Allspice - 2 peas
- Citric acid - 0,5 tsp.
- Sugar - 60 g
- Salt - 40 g
- Water - 1,7 l
Step-by-step cooking recipe
Peel kohlrabi cabbage and cut into small cubes.
Boil water, add salt, cabbage and boil for 2 minutes.
Flip into a colander and rinse with cold water.
Put spices and kohlrabi cabbage in jars.
Boil water, add sugar, salt, citric acid and boil for 1 minute.
Pour boiling marinade over cabbage in jars and sterilize for 10 minutes.
Roll up, turn upside down and wrap up with a warm blanket for a day.
