I want to share with you an excellent recipe for eggplant without vinegar for the winter. Vegetables are pre-boiled in salted water with spices. Instead of vegetable oil, you can use cold-pressed corn or olive oil.
Ingredients
- Eggplant - 2 kg
- Onion - 4 pieces
- Vegetable oil - 250 ml
- A mixture of peppers with peas - 0,5 tsp.
- Bay leaf - 2 pieces
- Sugar - 1 tbsp.l.
- Salt - 2 art.l.
- Water - 3 l
Step-by-step cooking recipe
Cut the eggplant into small pieces.
Boil water, add salt, sugar, spices and eggplant.
Boil for 5 minutes and discard in a colander.
Peel and slice the onion.
Mix eggplants with onions and put them in clean, dry jars.
Spread the oil evenly over the jars, sterilize for 15 minutes and roll up.
