Traditionally, this dish is made from sweet pepper. Over the years, the recipe has been modified and new options have appeared. Delicious lecho is obtained from zucchini and carrots. I cook with the addition of fresh tomatoes, but you can also use tomato juice.
Ingredients
- Zucchini - 2 kg
- Bell pepper - 1 kg
- Tomatoes - 2 kg
- Carrots - 500 g
- Onion - 500 g
- Garlic - 100 g
- Vegetable oil - half a glass
- Vinegar - half a glass
- Sugar - 120 g
- Salt - 100 g
Step-by-step cooking recipe
Grate the zucchini and carrots. Peel and chop the onion and bell pepper.
Peel the tomatoes and pass them through a meat grinder.
Mix everything, add butter, sugar, salt and boil for 30 minutes.
Add the chopped garlic and boil for another 10 minutes.
Add vinegar, mix and arrange in prepared jars. Roll it up, turn it upside down and wrap it with a thick towel.
