Grate carrots and beets, chop cabbage, chop tomatoes in a blender, chop the rest of the vegetables.

Fry the onion in oil until transparent.

Add carrots and beets, and simmer for another 10 minutes.

Add tomatoes, vinegar, salt and sugar.

Add cabbage, pepper and potatoes, and simmer the borscht over low heat for an hour after boiling.

Roll it up in sterile jars for the winter.
