Classic plum and hop-suneli tkemali sauce for winter

Do you want to get to know Georgian cuisine better? Cook the classic tkemali sauce from plums and hops-suneli! I advise you to approach the issue seriously and find plums of the Tkemali variety. If there are none, take an unripe cherry plum.
Ingredients
- Plums (tkemali) – 2 kg
- Hot red pepper - 1 pod
- Cilantro - 20 g
- Garlic - 50 g
- Hop-suneli - 1 art.l.
- Vinegar - 2 tbsp.l.
- Sugar - 1 art.l.
- Salt - 1 art.l.
Step-by-step cooking recipe
Wash the plums, put them in a saucepan and fill with water.
Boil for 15 minutes and then rub through a sieve.
Finely chop the hot pepper, cilantro and garlic peeled from the husk.
Mix everything in a saucepan, add plum puree, sugar, salt and hops-suneli.
Boil for 5 minutes, pour in the vinegar and mix. Place the hot sauce in the prepared jars and roll up.
