A great recipe for lovers of spicy snacks. Eggplants in adjika are prepared without sterilization and other difficulties. The amount of hot pepper and garlic can be adjusted to your liking. For the rest, I advise you to adhere to these proportions.
Ingredients
- Eggplant - 1 kg
- Tomatoes - 1 kg
- Bell pepper - 1 kg
- Hot red pepper - 1 pod
- Garlic - 150 g
- Ground coriander - 0,5 tsp.
- Ground fennel - 0,5 tsp.
- Vegetable oil - 250 ml
- Vinegar - 60 ml
- Sugar - 2 art.l.
- Salt - 1 art.l.
Step-by-step cooking recipe
Cut the eggplant into slices and soak for 20 minutes in salted water.
Flip into a colander, and then dry thoroughly with a paper towel.
Fry the eggplants in oil until golden brown on both sides.
Mince tomatoes, hot peppers, peeled bell peppers and garlic.
Mix, add sugar, salt and spices.
Boil the adjika for 15 minutes over low heat.
Add the fried eggplant, boil for another 5 minutes and pour in the vinegar.
Spread out in sterilized jars, roll up and turn upside down.
