It's good when a couple of jars of vegetable caviar are hidden in the pantry. Anyone can easily cook it. I'm telling you a simple recipe for eggplant caviar with tomatoes. Vegetables are scrolled through a meat grinder, which means the consistency is perfect!
Ingredients
- Eggplant - 2 kg
- Tomatoes - 1 kg
- Bell pepper - 500 g
- Onion - 500 g
- Garlic - half a head
- Vegetable oil - 120 ml
- Vinegar - 80 ml
- Ground black pepper - 1 tsp.
- Sugar - 120 g
- Salt - 90 g
Step-by-step cooking recipe
Mince eggplants, tomatoes, peeled onions, garlic and bell peppers.
Heat the oil in a frying pan, add the onion and fry until transparent.
Add the bell pepper and simmer for 10 minutes.
Add tomatoes and cook for another 10-15 minutes.
Add eggplant, ground pepper, garlic, sugar and salt. Simmer all together for 20 minutes, stirring occasionally.
Pour in the vinegar, mix and close in the prepared jars.
