Caviar from honeydew for the winter through a meat grinder
Everyone likes this dish: mushroom pickers, housewives and even capricious guests. Delicious caviar from honeydew is prepared through a meat grinder, so the consistency is perfect. It can be wrapped in pancakes, spread on bread or toast.
Ingredients
- Honeydew - 2 kg
- Carrots - 400 g
- Onion - 400 g
- Vegetable oil - 120 ml
- Vinegar - 50 ml
- Bay leaf - 2 pieces
- Black Pepper - 10 peas
- Nutmeg (ground) – 0,5 tsp.
- Ground coriander - 0,5 tsp.
- Sugar - 1 art.l.
- Salt - 120 g
Step-by-step cooking recipe
Rinse the honey mushrooms thoroughly, put them in a deep saucepan, pour cold water and boil for 10 minutes.
Change the water, add bay leaf and black pepper peas. Boil for 5-7 minutes and discard in a colander.
Put carrots, peeled onions and slightly cooled honey mushrooms through a meat grinder.
Fry onions and carrots in oil for 10 minutes.
Add honeydew, sugar, salt and simmer for 20 minutes, stirring occasionally.
Add the remaining spices, stir and cook for another 5 minutes.
Pour in the vinegar, mix and arrange in sterilized jars. Roll up, turn upside down and wrap up for a day with a warm blanket.
