Beetroot caviar with garlic for winter through a meat grinder

When cooking vegetable caviar, I often use beetroot, which adds not only taste, but also brightness of color. Garlic gives caviar a pleasant piquancy. And the best thing is that this caviar can be made simply through a meat grinder – it's very convenient and fast.
Ingredients
- Beetroot - 2 kg
- Carrots - 500 g
- Onion - 500 g
- Garlic - 200 g
- Tomato paste - 100 g
- Vegetable oil - 150 ml
- Vinegar - 70 ml
- Salt - 1 tbsp.l.
- Sugar - 1 art.l.
Step-by-step cooking recipe
Peel the beets, onions and carrots. Put it through a meat grinder.
Add the tomato, oil, salt and sugar, and bring the caviar to a boil.
Boil it for 45-50 minutes on low heat.
Add crushed garlic and vinegar. Cook for another 5-7 minutes.
Roll the caviar in sterile jars for the winter.
