This dressing makes borscht even more satisfying and flavorful. I used fresh young tomatoes, beets and cabbage to make it juicy and full of flavor. This is a great way to save vegetables for the winter and always have a rescue stick at hand for quick cooking of the first dishes.

Chop all the vegetables as for borscht.
Add the rest of the ingredients except vinegar.
Bring the billet to a boil and simmer for 25-30 minutes on low heat.
Pour in the vinegar and roll the dressing into sterile jars.
