Greek salad with beans and vegetables for winter

Simple canned vegetables will not surprise anyone anymore. I have long preferred to roll up all kinds of salads and other more complex snacks. It's both tastier and more original. For example, such a Greek salad with beans and vegetables will definitely impress your loved ones.
Ingredients
- Bell pepper - 1 kg
- Onion - 1 kg
- Carrots - 1 kg
- Tomatoes - 2.5 kg
- Beans - 600 g
- Vegetable oil - 300 ml
- Garlic - 150 g
- Chili pepper - 1.5 pieces
- Salt - 1 art.l.
- Sugar - 2.5 tbsp.l.
- Vinegar (essence) – 2 tsp.
Step-by-step cooking recipe
Soak the beans overnight in advance and boil until half cooked.
Peel the tomatoes and cut all the vegetables into small cubes.
Mix tomatoes and beans, and simmer for half an hour on low heat.
Separately stew all other vegetables with butter, sugar and salt until soft.
Mix vegetables and tomatoes, add chili, garlic and vinegar essence.
Simmer the salad for another 10 minutes. Roll it up in sterilized jars.
