Fill the gelatin with cold water and put it aside for 15 minutes.
Grate the chocolate on a coarse grater. Set aside the most beautiful shavings for decoration.
Mix cream, sugar and vanilla in a saucepan. Simmer for 2 minutes.
Add the chocolate, gelatin and mix until completely dissolved.
