This recipe helps me out a lot in cases when I don't want to turn on the oven at all. Cheesecake without baking is prepared with the same shortbread, whipped cream and delicious mascarpone. It seems to me, it just can't be easier!
Ingredients
- Cookies (sand) – 300 g
- Butter - 100 g
- Mascarpone - 500 g
- Gelatin - 1 art.l.
- Water - 80 ml
- Cream (33% fat content) – 1 glass
- Powdered sugar - 150 g
Step-by-step cooking recipe
Mix gelatin with water and set aside for 15 minutes.
Break the cookies into pieces and place them in the bowl of a blender.
Add the butter and grind everything together until smooth.
Put the resulting mass into the prepared mold. Tamp the bottom tightly and form low sides.
Put the workpiece in the refrigerator for 40 minutes.
Heat the swollen gelatin in a water bath and wait until it completely dissolves. Do not boil!
Beat the cooled cream with powdered sugar. The mass should become very thick.
Gently add mascarpone, gelatin and mix well.
Pour the resulting mass into the dough blank and smooth it out.
Put the cheesecake in the refrigerator for 6 hours. Before serving, you can add fresh berries, mint leaves or pour topping.
