One of my favorite treats for tea is marshmallows. It has many advantages – lightness, ease of preparation, and also you never want a lot of it. Another advantage is the opportunity to cook vegan marshmallows, which is not inferior in taste to the usual.

Sprinkle the marshmallow mold with powdered sugar.

Whisk the aquafaba with citric acid until soft peaks, about 7 minutes.

Add vanilla and whisk for another 4 minutes until firm peaks.

Add the agar to the water, bring to a boil and boil for 3 minutes.

Add sugar and cook the syrup for another 3 minutes.

Continuing to beat the aquafaba, pour in the hot syrup in a thin stream.

Whisk everything together for another half minute.

Pour the mass into the mold, sprinkle with powdered sugar, leave for an hour and then cut the marshmallows.

Roll it in powdered sugar.
