- Sugar - 500 g

- Water - 140 ml

Step-by-step cooking recipe
Chop the black currant in a blender.
Rub the resulting mass through a sieve, mix with 200 g of sugar and boil for 10 minutes over low heat.
Beat the aquafaba with a mixer until it thickens. On average, it takes 20 minutes.
Continuing to beat, add the remaining sugar and lemon juice.
Mix agar-agar with water in parallel. Bring to a boil over low heat.

After 3 minutes, pour in the currant syrup and whisk everything together for another 3 minutes.
Put the mass in a pastry bag and put the marshmallows on the prepared surface.
