Ingredients
- Melon (pulp) – 250 g
- Egg whites - 2 pieces
- Agar-agar - 15 g
- Sugar - 550 g
- Water - 150 ml
Step-by-step cooking recipe
Chop the melon pulp in a blender.
Add 200 g of sugar, cooled egg whites and whisk for 5 minutes. The mass should greatly increase in volume.
In a small saucepan, mix the water and the remaining sugar.
Warm up, add agar-agar and boil for 3 minutes, stirring frequently.
Pour the syrup in a thin stream into the workpiece with proteins and beat with a mixer at high speed for 5 minutes.
Put the resulting mass in a pastry bag. Put on a suitable nozzle and place the marshmallow on the silicone mat.
Dry for 1 day, then carefully separate the marshmallows and connect them in pairs.
