Add 130 g of sugar in several rounds, continuing to beat.

At the end, add lemon juice and vanilla.

Boil water with agar-agar. Boil for 3-4 minutes.

Pour in the remaining sugar and boil the syrup until thick.

Continuing to beat the aquafaba, pour in the syrup in a thin stream.

Using a pastry syringe, put the mass on the parchment.

Let the marshmallows freeze for a couple of hours at room temperature.
