Peel the pumpkin, cut into small cubes and boil until soft. Grind it with a blender into a homogeneous puree.

Beat the sugar and yolks with a mixer until smooth and add more hot cream to them.

Whisk pumpkin puree with ricotta and orange juice using an immersion blender.
Mix both masses until smooth, pour into an ice cream mold and tighten with a film.
Send the workpiece to the freezer for a few hours. During this time, take it out every 30-40 minutes and beat it with an immersion blender. This is necessary so that the ice cream is homogeneous.
After about 4-5 hours, the mass can no longer be stirred – let it finally harden.
