France has given us a lot of delicious desserts, and eclairs can be called one of the most popular among them. Unleavened dough is perfectly combined with sweet filling and chocolate. They are prepared quite simply, although not without their secrets!
Ingredients
- Flour - 150 g
- Chicken eggs - 4 pieces
- Butter - 100 g
- Sugar - 1 tsp.
- Water - 1 glass
- Salt - on the tip of the knife

- Condensed milk - 1 bank
- Cognac - 1 art.l.
Step-by-step cooking recipe
Mix water and butter in a saucepan. On low heat, boil the mass for 5 minutes.
Remove the pan from the heat, add the sifted flour, salt, sugar and mix intensively.
Beat the mass with a mixer, adding one egg at a time. You should get a thick dough with a beautiful silk sheen.
Using a pastry bag, place the eclairs on a baking sheet lined with parchment paper.
Bake for 10 minutes in the oven at 200 degrees, then reduce the heat to 175 degrees and bake for another 10 minutes.
For the cream, whisk condensed milk, softened butter and brandy.
For the glaze, melt the butter in a saucepan. Add sugar, milk and cocoa.
Mix everything well and warm it up for 2-3 minutes over low heat.
Cool the finished eclairs, fill with cream and smear with chocolate glaze on top.
