Tartare is a great choice for lovers of raw meat. But here it is important that the main ingredient is fresh and of the highest quality. Classic tartare is made from young veal, and then I'll tell you how.
Ingredients
- Veal - 300 g
- Quail eggs - 2 pieces
- Olive oil - 3-4 tbsp.l .
- Gherkins (pickled) – 3-4 pieces
- Bow purple - 0.5 pieces
- Salt - 2 pinches
- Ground black pepper - 2 pinches
- Olives - 5-6 pieces
- Balsamic vinegar - 1 tsp.
- Arugula - 2 handfuls
Step-by-step cooking recipe
Chop the cold veal into a very small cube, season with salt and pepper. Knead.
Finely chop the onion, olives and gherkins, and mix too.
Using a ring, put this mixture into plates on a handful of arugula.
Then lay out the veal, sprinkle with oil and balsamic and put the yolk on top.
