Wash the chickpeas and soak them in cold water overnight.
Change the water, bring to a boil and simmer for 2 hours.
Drain the liquid into a separate container, and spread the chickpeas to dry on a towel.
After 10 minutes, place the chickpeas in the bowl of a blender and grind until smooth.
Add tahini, olive oil, paprika and 3 tbsp chickpea broth. Continue whisking for another 2-3 minutes.
Mix the finished hummus with lemon juice and salt.
