Soak the ears for 1 hour in water with vinegar, scrape with a knife and rinse.
Put pork ears, chicken, peeled vegetables and spices in a deep saucepan. Pour in cold water and cook for 4 hours over very low heat.
Fish out the vegetables. Discard the onion, cut the carrots into small pieces. Add garlic crushed with a knife handle to the broth, add salt. Boil for another 1 hour and turn it off.
